The grapes are destemmed and macerated for three to four weeks. Fermentation and aging takes place in barrels for one to two years. 10-25 mg per liter of sulfur added at bottling.
Fabio Gea makes delicious wines from small parcels in Barbaresco. The land comes from his maternal grandfather Pòtu, (diminutive for Giuseppe in dialect) and is centered around different parts of Barbaresco, mostly near the Bricco, During his grandfather's time, the vines were still in polyculture, although he was apparently an expert who at one time had over 200 grape varieties on his land. But the winemaking and vineyard care skipped a generation and most of the plots became semi-abandoned. Fabio, after receiving his doctorate and working as a successful geologist for corporate companies for a number of years, decided to leave that world and reprise the family winemaking tradition. He also started bringing the vineyards back into shape.

100% Montepulciano. The Concrete white and red are newer bottlings for this young winery. The Rosso fruit is harvested earlier for freshness from among De Fermo's 11 hectares of certified-biodynamic Montepulciano vine (the riper fruit from later harvest goes into the traditional rosato Le Cince Cerasuolo d'Abruzzo Superiore and the long-aged Prologo DOC Montepulciano d'Abruzzo). The grapes are hand-harvested, destemmed, crushed and macerated for only 4-5 days, with the goal of a younger-drinking version of this very tannic grape in mind.
Fermentation is spontaneous with indigenous yeasts and no temperature control. The wine is aged in concrete tanks--hence the very literal name of the wine--for up to a year and bottled without fining or filtering; sulfur is used judiciously during racking but never at bottling. Since the wine is classified simply as Vino Rosso, the only geographical indicator on the bottle is "L.A." for the locale of Loreto Apruntino.

Nestled in the tiny village of Lansac, Domaine du Possible is the brainchild of Loïc Roure. In 2003, Loïc scrapped his initial plan of opening a restaurant/winebar/retailer, deciding instead to start his own estate. Starting out with some vines in Latour de France, he soon expanded with land closer to Lansac. He also recently purchased four hectares in Caudiès-de-Fenouillèdes, a half an hour drive from the Agly Valley. The estate now consists of 10.5 hectares spread over many parcels and communes, all falling under the Côtes du Roussillon AOC.
The wines are vinified to be fresh, bright and easy-to-drink. Extraction and alcohol remain low, and instead the focus is on fruit, minerality and acidity. Most of the wines are initially
Foot-trodden, then whole clusters are added, resulting in a spontaneous, semi-carbonic maceration. Sulfur additions, if any, are decided each vintage, wine by wine. In cases where sulfur is added, Loïc never uses more than 10mg for the reds and 20mg for the white, and only at bottling.

A wine made from a mere 10 rows of vines. Teroldego is a close relative of Lagrein and native to the Südtirol as well. The 10 rows of vines average 30 years old and yield very small amounts of wine (for example, only 700 bottles in 2012). The vines are organically farmed and harvested by hand. Fermentation is with native yeasts and up to 30% whole clusters; maceration is several weeks. Unlike Nusserhof's other reds, the Teroldego is aged in used Burgundy barriques instead of botti, but for a similar length as the others: at least 2.5 years in wood followed by years in bottle. The name "Ty..." is short for Tyroldego. Nusserhof opts for Vino Rosso classification for the wine and thus cannot name the variety or vintage outright on the label; the vintage is indicated as a lot number in fine print.
