Steve dreamed of farming his entire life. He became an obsessed gardener and cook while studying philosophy in college. In 1994, while back in grad school for horticulture after three years as a bike messenger/wannabe farmer, he found a job in vineyards and orchards working for a small sustainable agriculture consulting firm. In 1999 he co-authored the California manual on sustainable vineyard practices. In 2002 he started consulting on vineyard practices in Napa. He still loves the challenge of solving vineyard problems for others, but since 2003 the primary focus has been on his own family farming and winemaking. Steve is a life-long student of the craft of viticulture.

Domaine Ott Rose Chateau de Selle 2021

The wine is a very pale pink highlighted, depending on the vintage, with golden, orange and even vermilion tints. Its bouquet reveals fresh fruit (mango, melon) punctuated with lemony notes. On the palate, its freshness develops through citrus aromas around a resolutely mineral core before ending with a subtly persistent finish.

Domaines Ott was founded in 1912 by Marcel Ott, an agricultural engineer from Alsace who dreamed of establishing a great wine estate near the Mediterranean. Today, the wineries are owned and managed by Champagne Louis Roederer and produce some of the world’s most prestigious wines. These wines are made at three distinctively different estates in the Bandol and Cotes de Provence appellations: Chateau Romassan, Clos Mireille and Chateau de Selle.

“Fleurs de Prairie” translates as “wildflowers,” celebrating the beautiful fields of wisteria, lavender, poppy, and sunflowers carpeting Provence. The wine is sourced from select Provencal vineyards that dot the coastal wind-swept hillsides of the region. The Mediterranean combination of sun, wind, mild water stress, and ocean influence provide ideal conditions for grapes to ripen to the perfect balance of flavor and freshness. Fleurs de Prairie is sourced from 20-year-old vines planted in clay-limestone hillsides at an altitude of 350-500 feet. The grapes are direct pressed to ensure a light, fresh style and fermented in temperature-controlled stainless-steel tanks.

Varietal: 50% Grenache, 20% Cinsault, 20% Syrah, 10% Tibourenc

Grown on the slopes of the Esterel mountain, not far from Antibes and Cannes, these wines rank with the very best of Provence. They are also extremely well priced. Enormous care is taken over the vinification, making every cuvée a delight with the local herb-rich provençal cuisine.

Delicate salmon colour. Intense nose bringing notes of small fruits, blueberries, and raspberries. Fruity palate with elegant fresh fruits flavours. Round body, the wine gains a lot of volume on the mid-palate, prolonging into a long, rich aftertaste. Good terroir expression. Pair with cured meet, grilled white meat, Provence flavoured and spicy dishes.
